The Central Texas College Patio Café Cuisine Nights offers flavors of India this Friday. Dinner will be served from 6 to 7:30 p.m. in the culinary area of the Student Center (building 106). Prepared by students in the international cuisine class of the culinary hospitality program, the menu features the following items.
The appetizer is grilled, ground lamb on skewer ($5.50) and the soup is pigeon pea stew. This specialty dish of India has a light regional spice of chana dal and coconut and is served with Tandoori bread ($10 or add a cup to an entrée for $2.50). The featured salad is marinated shrimp salad ($12.50) or choose the house salad ($3.75 or free with an entrée).
The evening’s entrees are stuffed chicken breast filled with homemade cheese, raisins, onions and spinach then seasoned with garam masaala and drizzled with a tomato fenugreek and cream ($12.50); pork in cashew pepper curry — a signature pork dish flavored with cashews, peppers, garlic and vinegar paste ($13.50); and grilled shark in garlic cream sauce ($16). All entrees are served with a choice of two side dishes. The sides are sweet potato curry, layered rice potato pilaf, homemade cheese and peas and sambhar gujerati (fried cabbage).
Top off the evening with dessert of either mango pistachio ice cream and gujjia — a homemade blend of mangos and pistachio nuts, churned to a frozen dessert then served with a sweet and nutty filled pastry accompanied by a saffron infused syrup ($4.50); or cardamom-scented yogurt with puffy whole wheat breads — sweet puffy whole wheat bread served with a creamy and flavorful yogurt cheese then garnished with an attractive chocolate decoration ($3.50).
