The Central Texas College hospitality/culinary arts program opens another season of the Patio Cuisine Nights dining experience Friday with an array of Scandinavian and Russian delights.

Start the meal with a soup appetizer and salad: pampushki — three crunchy Russian potato cakes pan-fried to a crisp golden brown and stuffed with a creamy ricotta cheese and chive filling; served with a sour cream dill sauce ($3.50). Then there is lamb and cabbage stew — tender lamb and sliced potatoes with sautéed red and white cabbage and caramelized onions simmered in a basil and garlic-infused seasoned chicken broth ($12 or add a cup to an entrée for $2.50 or a bowl to an entrée for $5). The salads are an Olivier salad — a Cornish hen salad blended and roasted with diced cucumbers and potatoes, moistened with a Dijon mustard vinaigrette and nestled on a bed of fresh lettuce greens with egg wedges ($12.50). Or choose the house salad ($3.50).

The evening’s entrees are salmon kulebyaka — a Russian festive dish consisting of a moist 4-ounce salmon filet and eggs sitting on a bed of buttery dill-flavored rice, all encased in a crisp puff pastry ($14); chicken Kiev — a modern Russian dish of golden brown, deep-fried chicken breasts filled with garlic butter, lemon zest, tarragon and nutmeg ($12.50); and Morbrad bed svedsker og aebler (stuffed pork) — vodka-marinated pork loin stuffed with prunes and caramelized apples roasted to perfection and accompanied with a flavorful pan dripping demi-glace ($13). All entrées are served with a house salad, iced tea, honey oat roll and a choice of two side dishes.

The side dishes are saffron rice pilaf, hasselback potatoes, cucumber salad and green beans. Additional side dishes are $1.50.

For dessert choose either the pashka (Easter cheesecake) — a rich Russian candied fruit dessert with lemon zest, raisins, ricotta cheese, blanched almonds and tarragon; garnished with a tuile cookie and honey ($4); or the rigo jancsi (chocolate roll cake) — a chocolate rolled almond cake filled with chocolate cream and covered with chocolate glaze then garnished with fresh whipping cream and chocolate shavings ($4.50).

Seating for the Patio Café Cuisine Nights is limited and will begin at 6 p.m. Reservations are required by calling 254-526-1515.
