The next Patio Café Cuisine Nights Dining Experience hosted by the Central Texas College Culinary Arts department is Friday. The menu features a French cuisine.

The featured soup for the evening is potage printanier (spring vegetable) soup ($7.50 for a bowl or $2 for a cup with an entrée).

The appetizer is portabella mushroom tartlet ($4.75) — a puree of sweet onions and walnuts on homemade bread covered with slices of blanched portabella mushrooms and topped with parmesan cheese and red bell peppers.

Diners can choose the house salad ($3.75 or free with an entree) or the salade de Dijon ($8.50) — a marinated grilled chicken breast nestled on a bed of mixed salad greens, tomatoes, olives and cranberries served with tangy Dijon mustard dressing. Honey oat rolls will be served free with an entrée or for $1.50 each.

The evening’s entrees are braised pork with pearl onions and grapes ($15) — pork loin simmered in white wine, garlic, onions, thyme and bay leaves and topped with a pearl onion and grape integral sauce. Then there is the Marseille-style shrimp with ratatouille ($17.50) — traditional ratatouille (a combination of simmered winter vegetables topped with six jumbo grilled shrimp.

The final entrée is Cornish hen ($16.50).

Each entrée is served with a house salad, a honey oat roll, iced tea and choice of two side dishes, except the ratatouille, which is served with one side dish. The side dishes are potato croquettes, gnocchi Parisienne, asparagus with pistachio polonaise, and baked carrot and broccoli terrine.

For dessert, diners can choose the triple layer chocolate macaroon cake ($5) or the sweet pate a choux with blackberry mousse ($4.50).

Dinner will be served between 6 and 7:30 p.m. in the culinary area of the Student Center (building 106).
