This Friday’s Patio Café Cuisine Nights Dining Experience hosted by the Central Texas College Culinary Arts department offers a menu of Cajun Creole delights.
Start the meal with an appetizer or soup: chicken and andouille gumbo ($8.25 for a bowl or $2.50 for a cup with an entrée) — a hearty soup of chunks of chicken, vegetables and sausage simmered in Creole spices served on a bed of rice and accompanied with a honey oat roll and a house salad.
The Cajun hot crab dip ($5.25) is a creamy balance of lump crab meat and Creole seasoning served with six crostini.
Honey oat rolls also will be served free with an entrée or for $1.50 each.
For salads, diners can choose the grilled chicken salad ($8.75) or the house salad ($3.75 or free with an entree).
The evening’s entrees are: Creole chicken pasta — a zesty sautéed chicken breast served on a nest of linguini pasta with basil and garlic cream sauce ($10.75). This entrée is served with one side dish.
Louisiana catfish — a deep-fried, lightly-breaded catfish finished with a delectable red remoulade sauce ($11.75).
Cajun rib-eye steak — an 8-ounce rib-eye dry rubbed in Cajun spices ($15.70).
The catfish and steak are served with a choice of two side dishes.
The side dishes are Cajun red beans and rice, fried okra, maque choux and Cajun coleslaw.
Finish the meal with a dessert of either croissant bread pudding ($3.75) or bananas foster ($4.50).
Dinner will be served between 6 and 7:30 p.m. Friday in the culinary area of the Student Center (building 106).
Reservations are required by noon Thursday. Call 254-526-1515.
