Bianca Daniels stands with her children Ashton, 4, and Olivia, 8. With the rest of the family being gluten-tolerant, Daniels has to use separate food, hygiene products and utensils for Olivia, who suffers from celiac disease.

Avoiding gluten has been a growing health trend over the past decade. But only few actually have to avoid gluten in order to stay healthy.

Besides a simple intolerance, celiac disease is a serious health condition that forces patients to ditch gluten.

Killeen resident Olivia Daniels, 8, was diagnosed with celiac disease early 2017. Since then, she has been following a gluten-free lifestyle in order to stay healthy.
