To the Editor:

A review of 12,000 papers on climate change, in the May 15 issue of “Environmental Research Letters,” found that 97 percent of scientists attribute climate change to human activities.

Although we’re unlikely to reverse climate change, we can mitigate its effects by reducing our driving, energy use and meat consumption.

Yes, meat consumption. A 2006 U.N. report estimated that meat consumption accounts for 18 percent of manmade greenhouse gases.

A 2009 article in the respected World Watch magazine suggested that it may be closer to 50 percent.

Carbon dioxide, the principal greenhouse gas, is generated by burning forests to create animal pastures and by combustion of fossil fuels to confine, feed, transport, and slaughter animals.

The much more damaging methane and nitrous oxide are discharged from digestive tracts of cattle and from animal waste cesspools, respectively.

Each of us has the power to reduce the devastating effects of climate change every time we eat.

Our local supermarket offers a rich variety of soy-based lunch meats, hotdogs, veggie burgers and soy and nut-based dairy products, as well as an ample selection of vegetables, fruits, grains, and nuts.

Product lists, easy recipes and transition tips are at www.livevegan.org.

the whole "climate change" (A natural process) theories, along with the former "global warming" (Another natural process) theories are all proven hoaxes.

"Climate Change" was formerly known as "Global Warming" until it became hard to explain the "warming" part when there was "cooling" going on.

Yes, the hypocrisy is endless... in fact, it's laughable!

Al Gore, the biggest promoter of "Climate Change", builds a 6 million dollar mansion on the ocean front and then tries to scare everyone into believing the oceans are going to rise. One can't help but find it laughable. (You can bet Al's laughing... all the way to the bank!)

Let's reduce our carbon footprint by using mercury laced light bulbs and driving electric cars that use coal for the source of the electricity. Hey, I know! We could use our food supply for energy! After all, half of the population needs to cut back on their food consumption, anyway. (See what we did there... solved two problems in one!)

While we're at it, don't buy live Christmas trees from tree farmers who replace the trees that are cut down. It's much better to buy the plastic ones from the air and water polluting factories... in China.

I would say leave the cows to flatulate in the fields but the same people will be complaining about that, too!

    To the Editor:
This year’s developments have certainly vindicated those of us who care about our health, our environment and our treatment of animals.

In January, first lady Michelle Obama unveiled revamped federal guidelines requiring school cafeterias to serve more fruits, vegetables, and whole grains with less sodium and animal fat.

    --------------

I thought I recognized Mr. Gifford's name and his advising the public on their dietary habits before, The I remembered he had posted the above, using advise given by Michelle Obama .
I'm sorry, I might have been able to accept the 'don't eat anything that taste good' diet he suggest. But once I saw his source of knowledge on the subject, I'll have to once again, not pay any attention.

Mrs.Obama has given similar advise as Mr. Gifford, to others including the school children, but I've saw her eating at the many banquets she's attended and the dinner parties she has given at the white house. And her own choice of food she chooses for herself and her friends or guest is not anything like, the food Mr. Gifford (through advise from Mrs. Obama) suggest the rest of us eat. There's always meat on the table and seconds if you want it.

Unfermented soy products should come with a warning label like tobacco products do. Unfermented soy has the following 10 adverse affects on your body:

    1. High Phytic Acid (Phytates): Reduces assimilation of calcium, magnesium, copper, iron and zinc. Phytic acid in soy is not neutralized by ordinary preparation methods such as soaking, sprouting and long, slow cooking, but only with long fermentation. High-phytate diets have caused growth problems in children.

    2. Trypsin inhibitors: Interferes with protein digestion and may cause pancreatic disorders. In test animals, trypsin inhibitors in soy caused stunted growth.

    3. Goitrogens: Potent agents that block your synthesis of thyroid hormones and can cause hypothyroidism and thyroid cancer. In infants, consumption of soy formula has been linked with autoimmune thyroid disease. Goitrogens interfere with iodine metabolism.

    4. Phytoestrogens/Isoflavones: Plant compounds resembling human estrogen can block your normal estrogen and disrupt endocrine function, cause infertility, and increase your risk for breast cancer.

    5. Hemagglutinin: A clot-promoting substance that causes your red blood cells to clump, making them unable to properly absorb and distribute oxygen to your tissues.

    6. Synthetic Vitamin D: Soy foods increase your body's vitamin D requirement, which is why companies add synthetic vitamin D2 to soymilk (a toxic form of vitamin D).

    7. Vitamin B12: Soy contains a compound resembling vitamin B12 that cannot be used by your body, so soy foods can actually contribute to B12 deficiency, especially among vegans.

    8. Protein Denaturing: Fragile proteins are denatured during high temperature processing to make soy protein isolate and textured vegetable protein (TVP). Chemical processing of soy protein results in the formation of toxic lysinoalanine and highly carcinogenic nitrosamines.

    9. MSG: Free glutamic acid, or MSG, is a potent neurotoxin. MSG is formed during soy food processing, plus additional MSG is often added to mask soy's unpleasant taste.

    10. Aluminum and Manganese: Soy foods contain high levels of aluminum, which is toxic to your nervous system and kidneys, and manganese, which wreaks havoc on your baby's immature metabolic system.

Soy's antinutrients are quite potent. Drinking just two glasses of soymilk daily provides enough of these compounds to alter a woman's menstrual cycle. But if you feed soy to your infant or child, these effects are magnified a thousand-fold. Infants fed soy formula may have up to 20,000 times more estrogen circulating through their bodies as those fed other formulas. You should NEVER feed your infant a soy-based formula!

In fact, infants fed Soy Formula take in an estimated five birth control pills' worth of estrogen every day.

HOOAH! Bubba but I do like the editor posting stuff like this so we can see just how some people are so ignorant to the real facts. It’s like bottled water and organic food people think’s it’s healthier but they’re being conned.

It seems that every few weeks, this beatnik gets a letter published with his ridiculous theories that somehow mankind, short of exploding every nuke on the planet simultaneously, can have any effect on the "climate". More insulting, he wraps this nonsense around the so-called "vegan" lifestyle, one which is contrary to good, normal human health, as humans are omnivorous creatures. Frankly, it has become tiresome and annoying, and makes me question the intellect of the editor.

Maybe the people at the UN can put down their organic joints for a minute and explain the climate changes on Mars I don’t believe there are any evil meat eaters up there?
