Jimmy’s Egg came to Killeen in a roundabout way.

As Jim Mellon, a partner in the business relates the story: Todd Evans, an oral surgeon from Temple who is the other partner, used to go to Oklahoma to visit his son.

While there, Evans would eat breakfast at Jimmy’s Egg —which started in Oklahoma.

As Evans grew to like the restaurant, he joked, “Now I go to Oklahoma to have breakfast at Jimmy’s Egg. Then I visit my son.”

Jimmy’s Egg, 1103 W. Stan Schlueter Loop, officially opens Monday. On Saturday, the staff hosted a variety of area residents for a free breakfast, as a way to practice their skills.

Mellon, of Harker Heights, is a longtime resident of the area. After the Vietnam War, he came to visit a friend who was stationed at Fort Hood. Soon after, he and his wife moved here.

“We’ve raised six kids here, and have 20 grandchildren,” Mellon said. “I still don’t have cowboy boots.”

Previously, Mellon worked with other area physicians, opening seven Jersey Mike’s locations in two years. He retired briefly, then partnered with Evans to open Jimmy’s Egg.

Serving breakfast and lunch from 6 a.m. to 2 p.m. seven days a week, Jimmy’s Egg specializes in omelets with home fries, queso burrito, grits, biscuits, along with breakfast regulars like pancakes, Belgian waffles, eggs Benedict and “the best cinnamon rolls in the world,” according to Marilyn Ruggles, vice president of marketing for Jimmy’s Egg corporate office.

The lunch menu offers salads, sandwiches, burgers, chicken quesadillas and country fried steak.

“If you want a burger at 6 in the morning, we serve it,” Ruggles said. “If you want breakfast in the afternoon, we’ll do it.”

The restaurant is one of several new business to open in the shopping center anchored by Killeen’s third H-E-B, which opened in April. Other stores in the shopping center include a Cricket cellphone store, Great Clips, Lone Star Pediatric Dental and Venetian Nails and Spa.

Jimmy’s Egg is a chain of restaurants founded 30 years ago as a single location in Oklahoma City.

The Killeen location is the 61st restaurant, with others in Texas, Oklahoma, Missouri, Arkansas, Kansas, and Nebraska, New York and Iowa.

Popular menu items include the “garbage breakfast,” skillet scrambles, and create-your-own omelets.

On the lighter side, the restaurant offers the Skinny Jimmy, a spinach and mushroom egg white omelet and sweet potato pancakes that are certified by the American Heart Association.

The new 3,500-square-foot restaurant seats 122 customers in booths and at table. Counter seating offers customers a full view of the open kitchen.

The restaurant will employ about 25 people.

“We are very excited to continue expanding the Jimmy’s Egg brand in Texas,” said Regina Rodriguez, general manager of the restaurant. “Our eggs are cracked to order every time and our pancake batter is made fresh every day. It’s as fresh as breakfast gets.”

“We want our customers to be able to have breakfast, with large portions a fair price,” added Ruggles. “We’re all about families and service.”
